Bring effortless comfort to your table with this One-Pan Sausage Tomato Spaghetti — a quick, hearty pasta dish bursting with juicy tomatoes, savory sausage, and aromatic garlic. Made entirely in one skillet, this recipe delivers restaurant-quality flavor with minimal cleanup. Perfect for weeknights, family dinners, or cozy date nights, it’s a must-try for anyone who loves simple, satisfying Italian meals.

Ingredients

Scale
  • 180200 g spaghetti
  • 250 g sausage (Italian or chicken), sliced
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp tomato paste (optional for richer sauce)
  • 1 cup pasta water (reserved)
  • 1 tsp sugar (balances acidity)
  • Salt & pepper, chili flakes to taste
  • Chopped scallions/basil & grated Parmesan (optional)

Optional Add-Ons

    • Spinach or arugula for a green boost
    • Crushed fennel seeds for a Mediterranean aroma
    • A drizzle of cream for extra richness

Instructions

  • 1. Boil the Pasta
  • Start by cooking spaghetti in salted water until just shy of al dente. Reserve one cup of pasta water—it’s the secret to achieving that glossy, restaurant-style finish.
  • 2. Sear the Sausage
  • In a large skillet, heat olive oil. Add sliced sausage and sear for 4–5 minutes until golden and caramelized. Remove and set aside.
  • 3. Build the Sauce
  • In the same pan, sauté minced garlic for 30 seconds. Add cherry tomatoes and a pinch of salt. Let them blister and release their juices. Stir in tomato paste and sugar to balance acidity.
  • 4. Combine Everything
  • Return the sausage, toss in the drained spaghetti, and add a splash of reserved pasta water. Stir for 1–2 minutes until the sauce clings beautifully to each strand.
  • 5. Finish & Serve
  • Season with pepper and chili flakes. Garnish with scallions, basil, and grated Parmesan.

Notes

  • Reserve pasta water—it’s key to the glossy sauce.
  • Adjust chili flakes to taste.
  • Add a touch of cream for a richer sauce.
