A delicious one-skillet chicken and shrimp recipe packed with bold American flavors. Perfect for any season and quick enough for a weeknight dinner!

- 2 boneless, skinless chicken breasts, cut into bite-sized chunks
- – 1/2 lb (225g) raw shrimp, peeled and deveined
- – 1/2 tsp salt
- – 1/2 tsp black pepper
- – 1/2 tsp smoked paprika
- – 1/4 tsp cayenne pepper (optional)
- – 2 tbsp olive oil
- – 3 garlic cloves, minced
- – 1 tbsp lemon juice
- – 1 tsp Dijon mustard
- – 1 tbsp butter
- – 1 small red onion, sliced
- – 1 red bell pepper, sliced
- – 1 yellow bell pepper, sliced
- – 1/2 cup cherry tomatoes, halved
- – 1/4 cup chicken broth (or dry white wine)
- – 1/2 tsp Italian seasoning
- – 2 tbsp chopped fresh parsley
- – Lemon wedges (for serving)
Instructions
- 1. In a bowl, mix olive oil, garlic, lemon juice, and Dijon mustard. Add chicken and shrimp, season with salt, pepper, paprika, and cayenne. Toss well and marinate for 10–15 minutes.
- 2. Heat a skillet on medium-high, add a little olive oil, and sear chicken for 5–7 minutes until golden. Remove and set aside.
- 3. In the same skillet, melt butter and sauté onion, peppers, and cherry tomatoes for 3–4 minutes.
- 4. Add shrimp and cook 2–3 minutes per side until pink and opaque.
- 5. Deglaze the pan with chicken broth or wine, then return the chicken to the skillet. Sprinkle with Italian seasoning and simmer 2–3 minutes.
- 6. Garnish with fresh parsley and serve with lemon wedges.
Notes
For a creamy twist, add 1/4 cup of heavy cream and 2 tbsp Parmesan at the end. Great with pasta or rice!
