Ingredients
Scale
- 1/2 lb (225g) large shrimp, peeled, deveined, split down the back
- 1/4 tsp baking soda
- 1/2 lb (225g) chicken breasts, sliced into thin strips (3/4 inch x 2–3 inches)
- Kosher salt and cracked black pepper (to taste)
- 1 tbsp all-purpose flour (or gluten-free replacement)
- 2 tsp butter (for chicken)
- 4 tbsp (60ml) extra-virgin olive oil, divided, plus more if needed
- 4 tsp (25g) minced garlic (4–5 cloves)
- Pinch of red pepper flakes
- 1/2 cup (120ml) dry vermouth (or white wine substitute)
- 3 tbsp (45g) unsalted butter, cubed
- 1 tbsp lemon juice + 1 tsp lemon zest
- 1 tbsp (9g) minced fresh herbs (parsley, basil, chives, marjoram)
- 1 lb (450g) pasta (spaghetti or linguini)
- Lemon wedges, for garnish
Instructions
- Toss shrimp with 3/4 tsp kosher salt and baking soda. Let stand 10 minutes to 1 hour. Rinse under cold water before cooking.
- Season chicken strips with salt, pepper, and flour until coated.
- Heat skillet over medium-high. Add 2 tsp butter + 1 tbsp olive oil. Cook chicken 3–4 minutes per side until golden. Remove and set aside.
- In same skillet, heat 2 tbsp olive oil. Cook shrimp 2–3 minutes until just pink. Transfer to plate with chicken.
- Add remaining olive oil, garlic, and red pepper flakes. Sauté 45 seconds until golden.
- Pour in vermouth, deglaze pan, and reduce by half (about 3 minutes).
- Lower heat, whisk in cubed butter until emulsified. Add lemon juice and zest. Taste and adjust salt.
- Return shrimp and chicken to skillet, toss with sauce and herbs.
- Cook pasta al dente, drain, and combine with sauce, chicken, and shrimp.
- Garnish with parsley and lemon wedges. Serve immediately.
Notes
- Don’t overcook shrimp—remove as soon as they turn pink.
- Vermouth can be swapped for dry white wine or chicken broth.
- Use gluten-free pasta for a GF-friendly option.
- For extra creaminess, add 1/4 cup heavy cream before finishing with butter.
